At Calgary’s Lakeview Gluten-Free Bakery (on 90th Street), members of the long-standing Hinton family bakery business make a special point of celebrating Mother’s Day.
In our deepest hearts, we cherish the memories of the mothers we have lost, as well as celebrating the mothers who are with us today.

A very special mother
One very special mother currently residing in a Calgary nursing home, with a serious and life-threatening disease, is Lakeview Bakery’s founder, Brian Hinton’s wife, Maureen Hinton.
Maureen was an absolute trooper and the backbone of the Lakeview Bakery for many decades. In fact, for several years, her husband, Brian, travelled the world as a roving ambassador for the Canadian baking industry. Maureen Hinton single-handedly managed the Lakeview Bakery.
She did every possible job that you think of. And more!
And this gorgeous woman skilfully managed all these jobs with her consummate style, grace and a ferocious passion for excellence.
Rigorously trained in England as a registered nurse and midwife, Maureen Hinton was one mother of a bakery manager!
Age and illness may have caught up with our beloved Maureen. But they have not dimmed her capacity for laughter and joy. And the members of the extended Hinton family continue to honour their matriarch and her generous, forthright, and determined spirit and her passionate “roll-up-your-sleeves” commitment to the success of their family enterprise.
They want to create a special and memorable treat for Maureen on this Mother’s Day.

It will be a special celebration for a very special person.
As a result, husband Brian is baking a special cake for Maureen and for all of us who celebrate Mother’s Day.

A Hummingbird Cake from the Lakeview Gluten-Free Bakery
SPOILER ALERT! This is not a keto-friendly product
While this delicious is gluten-free (as it will be baked in our dedicated facility at the Lakeview Gluten-Free Bakery), it is definitely not ketogenic. Not in a million years.
Not in your dreams.
Do not expect to eat more than three crumbs of this cake if you are on a keto diet unless it is the only thing you will eat that week – or at least on Mother’s Day! (Or maybe with a dollop of sugar-free cream!)

Brian Hinton has been spending long hours recently testing (and tasting!) new bakery products that are extremely low in carbs to support the keto diet.
But this week…
But this week it’s springtime. And Brian is recalling with a soft heart the glorious springtime garden he shared with Maureen.

In honour of Maureen Hinton – and Mother’s Day – Brian has tied on his black apron – again – and is lashing out with a sugary, creamy, fruit-filled cake that will delight anyone who purchases it for Mother’s Day – or for any other special occasion.
This is a classic cake.
Some see the Hummingbird Cake as a sort of carrot cake. But it is much more than that. It has it has a rich consistency, generous creamy icing, and huge quantities of both bananas and pineapple! That is why it clearly is not a ketogenic cake!
(Only the occasional raspberry or blueberry can honestly feature in baked goods for the keto diet.)
