OMG! It’s So Delicious!
In the Joy of Keto range of baked goods, our buttery Lucia bread is the latest product to pass the rigorous testing of the Joy of Keto Skunkworks research and development team.
It’s now passed with flying colours.
Early customer feedback indicates that it might just be a FODMAP diet success as well. There is convincing evidence for the benefits of a low-FODMAP diet, which appears to improve digestive symptoms in approximately 70% of adults with IBS.
We believe that we have hit on a recipe that will help those with Irritable Bowel Syndrome (IBS) and Chron’s disease.
It’s early days yet, but the initial customer response is very favourable!
Lucia bread is named after our lightweight and agile hummingbirds logo, Lucia.

It is made of the following ingredients: almond flour, whole egg, psyllium, stevia, baking powder, bicarb soda, xanthan gum, and salt. The crust is crisp and flavourful and the centre is soft, moist, and light. It’s not at all “eggy” in taste. That is something that is often a problem with other low-carb or keto-friendly breads.
Our Lucia bread has about one-twentieth of the carbs of regular bread.

(There is also a variety of the Trimcea bread that is not gluten-free. We bake that at our Crowchild bakery.)
Lucia bread is gluten-free and is baked at the Lakeview Gluten-Free Bakery. This gives you the confidence that no trace of gluten ever enters the premises.
Lucia bread is astonishingly low in carbs. It has only 2 carbs per slice!

Here is the label to prove the point.
Our vision is that both the Lucia bread and the Trimcea bread are located on a carb-friendly spectrum or continuum. Many peopel choose to cycle in and out of kardosis on a keto diet. That is often recommended. So you may find that the low-carb (but not fully keto) Trimcea bead is for you at that time in you diet.
When you cut it, you can change the thickness of the bread slices. That gives the customer more control over portionsize.
